You could use a very thin, very sticky tire to get the same grip as a fatter tire, but due to the friction, it would heat up much faster, not be able to dissipate the heat as well, and it would overheat and wear quickly. Just as with brakes, you can get just as much stopping force with small stock calipers and rotors as you can with larger calipers/rotors, but doing so in a smaller area leads to greater heat buildup and worse heat dissipation capability, and ultimately that ends up being the bottleneck with the stock system.
